Chef Shimokuni Shinobu: Dinner event featuring freshly harvested ingredients from Hokkaido
We will welcome Shimokuni Nobu, one of Hokkaido's leading chefs, and together we will experience harvesting and gathering various seasonal ingredients grown in the northern land and tour a sake brewery. To conclude the day, you will enjoy Chef Shimokuni's French course cuisine using ingredients you have harvested yourself. You can also enjoy some local sake. We are offering a special one-day experience that can be enjoyed by people of all ages.

- What to bring: You may sweat a little, so we recommend bringing a towel and a hat to prevent heatstroke.
- Please note: Please wear comfortable clothes that you don't mind getting dirty. Please refrain from eating natto the day before and the day of the event, as we will be touring the sake brewery.
- Contents (planned): Meet → Experience dairy farming at a ranch / Vegetable harvesting at a farm → Lunch → Visit to Hokkaido's oldest sake brewery → Chef Shimokuni's special French course (with sake) in Kuriyama Town → Disband. A detailed itinerary will be sent to you by email after you apply.

Number of participants
- Up to 40 people
- The minimum number of participants is 30. If the number of applicants does not reach the minimum number and the event is canceled, we will decide and notify you by July 8, 2024. If the event is canceled, all participation fees paid will be refunded.
Profile of Mr. Shimokuni Nobu
Auberge Au Mirador in Hakone After that, he spent a total of seven years training at Pierre Gagnaire in Tokyo. After working at a famous restaurant in the Rhone region of France, he returned to Hokkaido. After gaining experience at several restaurants in Sapporo, he was appointed head chef of the French restaurant W27. He discovered a new form of French cuisine based on his own philosophy. After W27 closed, he was approached by Cote D'or, a Michelin-starred restaurant representing Sapporo, in 2017, where he will serve as the fourth head chef until 2021. In 2021, he was crowned champion of DRAGON CHEF (now CHEF-1 Grand Prix) on ABC TV and TV Asahi. He is currently a freelancer, cooking all over Japan for the future of food.
