We held a luncheon where we paired handmade Mexican tortillas with Japanese sake.
Last year, we collaborated with Giovanni, whom we met at a business contest hosted by the Tokyo Metropolitan Government, and Mexican chef Guillermo, to host a taco and sake event.
Giovanni imports traditional varieties of corn from small-scale farmers in Mexico, processes them into tortillas, and sells them in Japan. While corn is usually thought of as cream to yellow in color, Mexico's traditional varieties come in a variety of unique colors, including blue, white, and purple, and the tortillas made from them are also colorful.
The food that Guillermo prepared was also far removed from our image of "tacos," as it was beautifully prepared and flavorful, using a variety of spices, and the participants were full of amazement.
I, Miyauchi, served sake to accompany each dish, and was surprised to see that the ten or so guests emptied ten 480ml bottles.
We would like to introduce Japanese sake overseas, and we are convinced that Japanese sake has the potential to pair well with Mexican food.
